Black Garlic or sometimes called Fermented garlic is not exactly fermented but it has gone through a process of heat and humidity similar to making yogurt. In the same way the carbohydrates in the garlic convert to sugar, the garlic turns black and takes on a gummy bear texture. It’s got a sweet, caramel/molasses with a garlic undertone bite.
You can quite literally eat it like a gummy bear.
Use in any way you would with garlic for an umami/sweet note.
My favorite ways to create decadent condiments like a simple black garlic compound butter. Or a black garlic aioli as a side for roasted sweet potatoes.
